Instructions
- Toast the bread and set aside.
- In a skillet, heat 2 teaspoons of olive oil and sauté the kale until it begins to wilt.
- Add garlic, salt, pepper, and red pepper flakes to the kale and cook for an additional minute.
- Remove from heat, stir in feta cheese, and cover to keep warm.
- In another skillet, heat the remaining olive oil and fry the eggs to your liking.
- Assemble by placing the kale mixture on each piece of toast and topping with a fried egg.
