Easy Kale Feta Egg Toast

Ingredients

The toast

  • 2 slices English Muffin Bread

The sauté

  • 3 teaspoons olive oil
  • 3 cups chopped kale
  • 1 teaspoon minced garlic
  • teaspoon salt
  • teaspoon pepper
  • teaspoon red pepper flakes

The eggs

  • 2 large eggs

The cheese

  • 2 ounces feta cheese

Instructions

  1. Toast the bread and set aside.
  2. In a skillet, heat 2 teaspoons of olive oil and sauté the kale until it begins to wilt.
  3. Add garlic, salt, pepper, and red pepper flakes to the kale and cook for an additional minute.
  4. Remove from heat, stir in feta cheese, and cover to keep warm.
  5. In another skillet, heat the remaining olive oil and fry the eggs to your liking.
  6. Assemble by placing the kale mixture on each piece of toast and topping with a fried egg.
