Ingredients

Sesame Roasted Tempeh

  • 1 package plain tempeh (8-ounce)
  • 2 tablespoons soy sauce (reduced sodium)
  • 1 tablespoon sesame oil
  • ½ teaspoon sriracha sauce
  • ½ teaspoon agave syrup
  • 1 clove garlic (minced)
  • 1 teaspoon fresh grated ginger

Tahini Ginger Dressing

  • 2 tablespoons tahini
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon water
  • 1 teaspoon freshly grated ginger
  • 1 pinch sea salt
  • ¼ teaspoon freshly grated black pepper

Grain Bowl

  • 2 cups baby kale
  • 8 pieces radishes (thinly sliced)
  • 2 cups cooked brown rice (short grain)
  • 2 cups fresh asparagus (blanched)
  • 2 cups sliced red bell peppers
  • 1 cup fresh sliced mushrooms
  • 4 teaspoons sesame seeds

Instructions

  1. Marinate cubed tempeh with soy sauce, sesame oil, sriracha, agave syrup, garlic, and ginger for at least 1 hour.
  2. Preheat the oven to 400°F and roast the marinated tempeh for 15-20 minutes until golden and crisp.
  3. Mix all tahini ginger dressing ingredients until smooth and creamy.
  4. In serving bowls, arrange baby kale, radishes, brown rice, asparagus, bell peppers, mushrooms, and sesame roasted tempeh.
  5. Drizzle each bowl with tahini ginger dressing and garnish with sesame seeds.
  6. Serve immediately.
