Matcha Basque Cheesecake

Ingredients

  • 8 oz cream cheese
  • ½ cup granulated sugar
  • 2 eggs
  • 1 egg yolk
  • 1 cup heavy whipping cream
  • ½ teaspoon vanilla extract
  • 2 teaspoons cornstarch
  • 1 tablespoon Matcha powder

Instructions

  1. Preheat the oven to 450°F (233°C) and allow the cream cheese to soften.
  2. Blend the softened cream cheese, sugar, eggs, egg yolk, heavy whipping cream, vanilla extract, cornstarch, and Matcha powder until smooth.
  3. Strain the batter through a fine-mesh sieve to remove lumps and air bubbles.
  4. Pour the batter into a lined 6-inch round cake pan and bake for 30 minutes until the top is caramelized and dark brown.
  5. Remove the cake from the oven and let it cool for 2 to 3 hours until it reaches room temperature.
  6. Refrigerate the cake for at least 4 hours or overnight before serving.
