Ingredients

The cheesecake

  • 24 ounces cream cheese
  • 1 cup granulated sugar
  • 1 unit vanilla pod (or 2 teaspoons vanilla extract)
  • 3 large eggs
  • ½ teaspoon kosher salt
  • cups heavy cream
  • cup all-purpose flour

For the pan

  • 1 teaspoon softened butter

Instructions

  1. Butter the cake pan and press parchment into it, ensuring it sticks.
  2. Preheat the oven to 400°F.
  3. Beat the cream cheese until smooth, then add sugar and vanilla, beating until fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Pour in the heavy cream slowly and mix until combined.
  6. Sift in the flour and mix until just incorporated.
  7. Pour the mixture into the prepared pan and smooth the top.
  8. Bake for 45 to 50 minutes until puffed and jiggly.
  9. Cool in the pan for about 1 hour, then remove and cool for another hour.
  10. Slice and serve at room temperature.
