Basque Cheesecake

Ingredients

  • 4 pkg cream cheese, at room temperature
  • 4 large eggs
  • 1 ½ cups heavy cream
  • 1 ¼ cups sugar
  • ¼ cup flour, all-purpose or gluten-free blend
  • ½ teaspoon salt
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat the oven to 450°F.
  2. Crumple and fit parchment paper into the pan, then lightly spray or butter it.
  3. Blend cream cheese and sugar until smooth, then sift in flour and mix until just combined.
  4. Add cream, vanilla, and salt, and pulse a few times to combine.
  5. Whisk eggs in a separate bowl, then mix into the cream cheese mixture until just combined.
  6. Pour the batter into the prepared pan, tap to remove bubbles, and run a knife over the top.
  7. Bake at 425°F for 40-50 minutes until the top is dark golden brown and the center jiggles.
  8. Cool for 30 minutes to 2 hours before serving warm or at room temperature.
