Ingredients

The cheese base

  • 1 pint half and half
  • 1 pound high-quality white American cheese, chopped
  • 8 ounces pepper jack cheese, shredded and divided

The seasonings

  • ¼ teaspoon kosher salt
  • ¼ teaspoon onion powder
  • ½ teaspoon chili powder
  • ½ teaspoon garlic powder

The chilies

  • ½ cup roasted green chilies (1 4.5-ounce can)

Instructions

  1. Combine half and half, salt, onion powder, chili powder, and garlic powder in a medium saucepan and heat until almost boiling.
  2. Reduce heat to medium-low and whisk in the chopped American cheese a handful at a time until melted.
  3. Repeat the process with the pepper jack cheese, reserving ¼ cup for later.
  4. Once the mixture is smooth, remove from heat and stir in the roasted green chilies.
  5. Transfer to a serving dish, add desired toppings, and sprinkle with reserved pepper jack cheese.
