Ingredients

  • ½ cup raisins
  • 1 tablespoon water
  • cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup brown sugar
  • ½ cup quick oats
  • ½ cup milk
  • 2 tablespoons milk
  • 1 large egg
  • ½ cup vegetable oil
  • 2 mashed overripe bananas

Instructions

  1. Soak the raisins in water for 2-3 hours, then pat dry.
  2. Preheat the oven to 380°F (190°C) and line a muffin pan.
  3. Sift the flour, baking powder, baking soda, and salt into a bowl, then add brown sugar and whisk.
  4. In another bowl, combine quick oats and milk.
  5. In a separate bowl, beat the egg, then mix in vegetable oil and mashed bananas.
  6. Make a well in the dry ingredients and add the egg mixture, folding until combined.
  7. Fold in the oats and milk mixture, then gently fold in the raisins.
  8. Spoon the batter into muffin liners until 75-80% full and sprinkle oats on top.
  9. Bake for 10 minutes at 380°F, then reduce to 350°F (180°C) for another 8-10 minutes until a tester comes out clean.
  10. Cool completely on a wire rack before storing.
