Instructions
- Soak the raisins in water for 2-3 hours, then pat dry.
- Preheat the oven to 380°F (190°C) and line a muffin pan.
- Sift the flour, baking powder, baking soda, and salt into a bowl, then add brown sugar and whisk.
- In another bowl, combine quick oats and milk.
- In a separate bowl, beat the egg, then mix in vegetable oil and mashed bananas.
- Make a well in the dry ingredients and add the egg mixture, folding until combined.
- Fold in the oats and milk mixture, then gently fold in the raisins.
- Spoon the batter into muffin liners until 75-80% full and sprinkle oats on top.
- Bake for 10 minutes at 380°F, then reduce to 350°F (180°C) for another 8-10 minutes until a tester comes out clean.
- Cool completely on a wire rack before storing.
