Ingredients

The truffles

  • 10 oz ghiradelli chocolate chips (60% cocoa)
  • 7 tablespoons full fat coconut milk
  • ½ teaspoon vanilla extract
  • ½ teaspoon ground cinnamon

The coatings

  • ¼ cup unsweetened coconut flakes, finely chopped
  • ¼ cup hazelnuts
  • 3 tablespoons cocoa powder

Instructions

  1. Combine chocolate chips, coconut milk, vanilla extract, and ground cinnamon in a bowl.
  2. Microwave the mixture for 30 seconds, stir, then microwave for another 30 seconds until smooth.
  3. Cover the bowl and refrigerate for 2-3 hours until firm.
  4. Scoop out small balls using a cookie scoop or tablespoon and shape them into smooth balls on a parchment-lined baking sheet.
  5. Toast hazelnuts in a pan over medium-high heat for 2-3 minutes.
  6. Chop the toasted hazelnuts finely in a food processor and place in a small bowl.
  7. Roll the truffles in cocoa powder, coconut flakes, or chopped hazelnuts.
  8. Serve the truffles.
