Decadent Chocolate Truffles

ghiradelli chocolate chips (60% cocoa)

ground cinnamon
The coatings

unsweetened coconut flakes, finely chopped

hazelnuts

cocoa powder
Instructions
- Combine chocolate chips, coconut milk, vanilla extract, and ground cinnamon in a bowl.
- Microwave the mixture for 30 seconds, stir, then microwave for another 30 seconds until smooth.
- Cover the bowl and refrigerate for 2-3 hours until firm.
- Scoop out small balls using a cookie scoop or tablespoon and shape them into smooth balls on a parchment-lined baking sheet.
- Toast hazelnuts in a pan over medium-high heat for 2-3 minutes.
- Chop the toasted hazelnuts finely in a food processor and place in a small bowl.
- Roll the truffles in cocoa powder, coconut flakes, or chopped hazelnuts.
- Serve the truffles.
