Nom Nom Chocolate Truffles
Ingredients
The truffle mixture

dark chocolate (70% cacao content or higher)

refined coconut oil

coconut cream or full-fat coconut milk

teaspoon
vanilla extract
The coatings

½
cup
finely shredded unsweetened coconut

cup
unsweetened cocoa
Instructions
- Chop the dark chocolate into small shards and place it in a bowl with the coconut oil.
- Heat the coconut cream or milk in a saucepan until it simmers.
- Pour the hot cream over the chocolate and let it sit for a couple of minutes.
- Stir gently until the chocolate is mostly melted, then whisk until smooth.
- Add the vanilla extract and mix well.
- Transfer the ganache to a sealed container and chill in the fridge until solid (at least 4 hours).
- Toast the shredded coconut in a 300°F oven for 3 to 5 minutes until golden brown.
- Scoop out balls of the chilled ganache and roll them into smooth balls.
- Coat each truffle in the toasted coconut or cocoa powder and sift off the excess.
