Ingredients

The chutney

  • 1 tablespoon olive oil
  • 3 pieces shallots, finely minced or sliced
  • ¼ cup bourbon
  • ¼ cup rice vinegar
  • ¼ cup red wine (e.g., Merlot)
  • 3 cups red or purple grapes, cut in half
  • 1 piece cinnamon stick
  • 1 piece bay leaf

For serving

  • to taste crackers and cheese

Instructions

  1. Heat olive oil over medium heat and add shallots, stirring occasionally until soft and fragrant.
  2. Add grapes and increase heat, then pour in bourbon, vinegar, and wine, allowing it to sizzle.
  3. Add cinnamon stick and bay leaf, then simmer for about 30 minutes until grapes break down.
  4. Smash the grapes into a jam-like consistency, remove from heat, cool, and serve with crackers and cheese.
