Instructions
- Whisk eggs, salt, and pepper together in a bowl.
- Mix flour and cornstarch in a shallow bowl.
- Heat oil in a deep pot to 350°F.
- Dip chicken pieces in the egg mixture, then coat with the flour mixture.
- Fry chicken in batches for 5 minutes or until golden brown, then drain on paper towels.
- Toss the fried chicken with sweet chili sauce and garnish with green onions before serving.
