Vanilla Bean Almond Butter

Ingredients

  • 2 cups raw almonds
  • 2 tablespoons maple syrup
  • ½ vanilla bean paste from
  • to taste sea salt
  • 1-4 teaspoons coconut oil (optional, partially melted)

Instructions

  1. Preheat the oven to 350ºF and line a baking sheet with tin foil.
  2. Place the almonds on the baking sheet and drizzle with maple syrup and sprinkle with sea salt, then toss to coat evenly.
  3. Roast the almonds for 8-10 minutes, then let them cool for 10 minutes.
  4. Transfer the cooled almonds to a high-speed food processor and process on high for about 5 minutes, scraping the sides as needed.
  5. If the almond butter is not drippy, add coconut oil one teaspoon at a time until desired consistency is reached.
  6. Add the paste from ½ a vanilla bean and process briefly to mix.
  7. Transfer the almond butter to a mason jar or airtight container for storage.
