Vanilla Bean Almond Butter

Instructions
- Preheat the oven to 350ºF and line a baking sheet with tin foil.
- Place the almonds on the baking sheet and drizzle with maple syrup and sprinkle with sea salt, then toss to coat evenly.
- Roast the almonds for 8-10 minutes, then let them cool for 10 minutes.
- Transfer the cooled almonds to a high-speed food processor and process on high for about 5 minutes, scraping the sides as needed.
- If the almond butter is not drippy, add coconut oil one teaspoon at a time until desired consistency is reached.
- Add the paste from ½ a vanilla bean and process briefly to mix.
- Transfer the almond butter to a mason jar or airtight container for storage.
