Paleo Salted Caramel Dip

Ingredients

  • 2 cups pitted dates, preferably Medjool
  • ¼ cup raw nut butter (almond or cashew recommended)
  • 4 teaspoons fresh lemon juice
  • ½ teaspoon sea salt (or more to taste)
  • 1 teaspoon vanilla extract or seeds of 1 vanilla bean, scraped
  • as needed N/A soaking water from dates

Instructions

  1. Soak the dates in enough water to cover for at least 4 hours.
  2. Drain the dates, reserving the soaking water.
  3. Add the dates to a blender along with all other ingredients except the soaking water.
  4. Blend on high until smooth.
  5. Add soaking water a little at a time until the desired consistency is reached.
