Instructions
- Cook the orzo in salted water until al dente, then drain.
- Heat a frying pan and add olive oil and butter.
- Add the diced onion, salt, and pepper, and cook until tender.
- Stir in the minced garlic.
- Whisk in the flour and cook for a couple of minutes to form a paste.
- Gradually add the chicken stock while whisking to prevent lumps.
- Increase heat and cook until the mixture thickens.
- Whisk in the heavy cream and adjust seasoning.
- Stir in 1 cup of parmesan cheese.
- Combine the cooked orzo with the sauce and transfer to a baking dish.
- Mix the remaining parmesan and mozzarella, then sprinkle over the orzo.
- Bake uncovered in a 375°F oven for 30 minutes until browned and bubbly.
- Garnish with chopped green onion before serving.
