Cheesy Baked Orzo Pasta

Ingredients

The pasta

  • 1 cup Orzo

The sauce

  • 1 Tbsp Olive Oil
  • 2 Tbsp Butter
  • 1 Small Sweet Onion
  • Pinch Salt
  • Pinch Pepper
  • 2 Cloves Garlic
  • 3 Tbsp Flour
  • 1 ¾ cups Chicken Stock
  • ½ cup Heavy Cream
  • 2 cups Parmesan Cheese
  • 1 cup Mozzarella Cheese
  • 1 Tbsp Green Onion

Instructions

  1. Cook the orzo in salted water until al dente, then drain.
  2. Heat a frying pan and add olive oil and butter.
  3. Add the diced onion, salt, and pepper, and cook until tender.
  4. Stir in the minced garlic.
  5. Whisk in the flour and cook for a couple of minutes to form a paste.
  6. Gradually add the chicken stock while whisking to prevent lumps.
  7. Increase heat and cook until the mixture thickens.
  8. Whisk in the heavy cream and adjust seasoning.
  9. Stir in 1 cup of parmesan cheese.
  10. Combine the cooked orzo with the sauce and transfer to a baking dish.
  11. Mix the remaining parmesan and mozzarella, then sprinkle over the orzo.
  12. Bake uncovered in a 375°F oven for 30 minutes until browned and bubbly.
  13. Garnish with chopped green onion before serving.
