Instructions
- Chop the vegetables into coin-shaped pieces and grill them with oil, salt, and pepper until tender-crisp.
- Stack the grilled vegetables on the ciabatta rolls and top with a tablespoon of pesto and a slice of tomato.
- Sprinkle or grate parmesan cheese on the tomato and broil in the oven for 3-5 minutes.
- Add another tablespoon of pesto to the top half of the bun, replace it on the sandwich, and enjoy.
