Easy Zucchini Tomato Sandwich

Instructions
- Heat olive oil in a sauté pan and add zucchini, cooking until golden brown, about 8 minutes.
- While zucchini cooks, toast the bread slices.
- Spread each toasted bread slice with soft plant-based cheese.
- Arrange cooked zucchini on top of the cheese on each sandwich.
- Top with sliced tomatoes on each sandwich.
- Add fresh basil leaves on top of the tomatoes.
- Serve immediately.
