Ingredients

Almond Topping

  • 1 cup old-fashioned oats
  • ½ cup almond meal or all-purpose flour
  • cup chopped Blue Diamond Oven Roasted Sea Salt Almonds
  • ¼ cup honey or maple syrup
  • 3 tablespoons melted coconut oil
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon salt

Berry Filling

  • 5–6 cups fresh berries
  • 2 tablespoons cornstarch
  • 1 tablespoon freshly-squeezed lemon juice
  • ¼ teaspoon almond extract (optional)

Instructions

  1. Combine all almond topping ingredients and set aside.
  2. Preheat the oven to 350°F.
  3. Pour the berries into a baking dish and sprinkle with cornstarch and lemon juice; toss to combine.
  4. Spread the almond topping evenly over the berries.
  5. Bake for 35-40 minutes until the topping is golden and the berries are bubbling.
  6. Serve warm or let cool and refrigerate for up to 3 days.
