Greek Kale Salad with Avocado

Ingredients

  • 3–4 cups kale, stems removed & roughly chopped
  • 1 each avocado, cubed or sliced
  • ½ medium cucumber, diced (~1 cup)
  • ¾ cup cherry tomatoes, halved
  • 1 medium sweet bell pepper, diced (~1 cup)
  • ½ medium green pepper, diced (~½ cup)
  • ½ small red onion, diced (~⅓ cup)
  • cup artichoke hearts, quartered
  • cup kalamata olives, sliced
  • 2–3 Tbsp fresh basil, chopped (or 1 tsp. dried)
  • ½ cup feta cheese, crumbled (optional)
  • ⅓–½ cup Greek Vinaigrette Dressing

Instructions

  1. Combine all salad ingredients in a large bowl.
  2. Add vinaigrette and gently toss the salad.
  3. Serve as a side or add cooked protein to enjoy as an entree.
