Instant Pot Sweet and Sour Country Ribs

Instructions
- Season the ribs with coarse salt and set aside.
- Pour pineapple juice, vinegar, and soy sauce into the Instant Pot.
- Add the ribs in an even layer and sprinkle pineapple chunks over them.
- Close the lid and set the steam release knob to Sealing.
- Press the Pressure Cook/Manual button and set for 20 minutes.
- While it cooks, prepare the rice if not done already.
- In a bowl, mix ketchup, sriracha, corn starch, and brown sugar.
- After cooking, let the pot sit for 10 minutes for natural release, then release the remaining pressure.
- Remove the ribs and cover with foil.
- Strain the liquid into a fat separator, discarding pineapple chunks.
- Pour half of the liquid back into the pot and turn on the Sauté setting.
- Whisk in the ketchup mixture and stir until thickened.
- Add the ribs and pineapple chunks back, coating them with the sauce.
- Serve over hot white rice and garnish with cilantro or green onions.
