Instant Pot Sweet and Sour Country Ribs

Ingredients

The ribs

  • 3-4 lbs Country Style Pork Ribs (boneless or bone-in)
  • 2 tsp Coarse Salt (1 ½ tsp table salt)
  • 1-1 ½ cups Pineapple Juice (from the drained chunks)
  • ¼ cup Rice Wine Vinegar
  • 1 Tbsp Low Sodium Soy Sauce
  • 1 28 oz can Pineapple Chunks, drained

The sauce

  • 2 Tbsp Ketchup
  • 2 tsp Sriracha Hot Sauce
  • 2 Tbsp Corn Starch
  • ¼ cup Brown Sugar (loosely packed)

To serve

  • 3-4 cups White Rice (cooked, hot)

Garnish (optional)

  • 2 Tbsp Cilantro, chopped
  • 2 Tbsp Green Onions, chopped

Instructions

  1. Season the ribs with coarse salt and set aside.
  2. Pour pineapple juice, vinegar, and soy sauce into the Instant Pot.
  3. Add the ribs in an even layer and sprinkle pineapple chunks over them.
  4. Close the lid and set the steam release knob to Sealing.
  5. Press the Pressure Cook/Manual button and set for 20 minutes.
  6. While it cooks, prepare the rice if not done already.
  7. In a bowl, mix ketchup, sriracha, corn starch, and brown sugar.
  8. After cooking, let the pot sit for 10 minutes for natural release, then release the remaining pressure.
  9. Remove the ribs and cover with foil.
  10. Strain the liquid into a fat separator, discarding pineapple chunks.
  11. Pour half of the liquid back into the pot and turn on the Sauté setting.
  12. Whisk in the ketchup mixture and stir until thickened.
  13. Add the ribs and pineapple chunks back, coating them with the sauce.
  14. Serve over hot white rice and garnish with cilantro or green onions.
