Ingredients

The ribs

  • 3-4 lbs Country Style Pork Ribs (boneless or bone-in)

The spice rub

  • cup Spice Rub

The cooking liquid

  • 2 cups Apple Juice (or water, beer, broth, etc.)
  • 1 Tablespoon Liquid Smoke
  • ¼ cup Apple Cider Vinegar

To finish

  • 1-2 cups Barbecue Sauce (your favorite brand or homemade)

Instructions

  1. Rub the ribs with the spice rub on all sides and let them sit.
  2. Add apple juice, liquid smoke, and apple cider vinegar to the pressure cooker and place the trivet inside.
  3. Place the ribs on the trivet without overlapping too much.
  4. Seal the lid and set the steam release knob to Sealing. Cook on high pressure for 25 minutes.
  5. After cooking, let the pressure release naturally for 10 minutes, then manually release any remaining pressure.
  6. Open the lid and transfer the ribs to a foil-lined baking pan. Slather with barbecue sauce.
  7. Optionally, broil the ribs for a few minutes to caramelize the sauce, watching carefully to prevent burning.
  8. Serve with extra barbecue sauce for dipping.
