Sweet Potato Crust Barbecue Chicken Pizza

Ingredients

The crust

  • 1 medium Sweet Potato, grated
  • 1 large egg
  • ½ cup Almond Flour
  • 2 tbsp Olive Oil
  • ¼ tsp Garlic Powder
  • ½ tsp salt
  • ¼ tsp Black Pepper
  • cup Parmesan Cheese

The toppings

  • 6 oz Chicken Breast, grilled and sliced
  • ¼ cup Barbecue Sauce
  • ¼ cup Cheddar Cheese, shredded
  • ¼ cup Mozzarella Cheese, shredded
  • cup Onion, finely chopped
  • ¼ cup Scallions, finely sliced

Instructions

  1. Preheat the oven to 450°F.
  2. Grind the sweet potato in a food processor until it has a rice-like texture.
  3. In a large bowl, mix the sweet potato with egg, almond flour, 1 tbsp of olive oil, garlic powder, salt, and black pepper to form a firm mixture.
  4. Place parchment paper on a pizza pan and transfer the mixture onto it.
  5. Cover with another piece of parchment and press out into a circle about 1/8 inch thick.
  6. Remove the top parchment and bake the crust for 20-26 minutes until firm and crisp around the edges.
  7. Top the crust with barbecue sauce, chicken, cheese, and onion.
  8. Bake for an additional 5-6 minutes until the cheese is melted.
  9. Garnish with scallions and crushed red pepper if desired.
