Instructions
- Preheat the oven to 450°F.
- Grind the sweet potato in a food processor until it has a rice-like texture.
- In a large bowl, mix the sweet potato with egg, almond flour, 1 tbsp of olive oil, garlic powder, salt, and black pepper to form a firm mixture.
- Place parchment paper on a pizza pan and transfer the mixture onto it.
- Cover with another piece of parchment and press out into a circle about 1/8 inch thick.
- Remove the top parchment and bake the crust for 20-26 minutes until firm and crisp around the edges.
- Top the crust with barbecue sauce, chicken, cheese, and onion.
- Bake for an additional 5-6 minutes until the cheese is melted.
- Garnish with scallions and crushed red pepper if desired.
