Ingredients

The lobster tails

  • 6 oz lobster tails (3-4 ounce each, split in half)

The coating

  • 1 cup all-purpose flour (seasoned with sea salt and black pepper)
  • 3 large eggs (whipped for egg wash)
  • 2 cups seasoned bread crumbs
  • ½ cup milk

For frying

  • as needed none corn oil

Instructions

  1. Preheat the cooking oil to 350 - 375 degrees F.
  2. Split the lobster tails down the middle and pull the meat out of the shell, leaving it attached.
  3. Pat the lobster tails dry with paper towels.
  4. Dredge the lobster tails in the seasoned flour, coating both the meat and shell.
  5. Dip the lobster and shell in the egg wash, ensuring they are completely covered, then let them drain briefly.
  6. Coat the egg-washed lobster tails in the seasoned bread crumbs, patting lightly to ensure they are fully coated.
  7. Place the breaded lobster tails in the preheated oil and fry for 4-5 minutes or until golden brown.
  8. Carefully remove the lobster from the oil and allow to drain on a baking rack for 1 minute.
  9. Serve the lobster with cocktail sauce, tartar sauce, or drawn butter.
