Chile Peanut Rice

The rice mixture

The cooking ingredients

ghee or extra-virgin olive oil

black mustard seeds

roasted, unsalted peanuts

onion, sliced into thin strips

Instructions
- Combine rice, lime juice, and salt in a large bowl and set aside.
- Heat ¼ cup ghee in a pan over medium heat, add mustard seeds and wait for them to pop. Remove from heat and add curry leaves.
- Return pan to medium-low heat, add peanuts, and cook until they turn brown and fragrant, then pour over the rice mixture.
- Heat remaining ¼ cup ghee in the same pan, add onion and chiles, and cook until onion is lightly browned. Stir into the rice mixture and adjust seasoning with salt and lime juice. Garnish with cilantro before serving.
