Instructions
- If using dried rice, cook it according to your preferred method and set aside.
- In a large bowl, combine the cooked rice, salt, and lime juice.
- In a skillet, heat ghee or oil and add mustard seeds, allowing them to pop.
- Add curry leaves and peanuts to the skillet, cooking until peanuts are fragrant.
- Pour the peanut-spice mixture over the rice and toss gently.
- In the same skillet, heat more ghee or oil and sauté onions and chilies until caramelized.
- Mix the onion-chili mixture into the rice and add cilantro.
- Taste and adjust seasoning with more salt and lime juice as desired.
