Indian Fried Rice with Peanuts, Chilies & Cilantro

Ingredients

The rice

  • 3 cups cooked basmati rice
  • 1 cup dried basmati rice
  • 1 teaspoon kosher salt

The dressing

  • 2 tablespoons fresh lime juice
  • 4 to 8 tablespoons ghee or olive oil
  • 1 tablespoon black mustard seeds
  • 10 pieces fresh curry leaves
  • 1 cup roasted unsalted peanuts
  • 2 small hot chilies
  • 1 medium yellow onion
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. If using dried rice, cook it according to your preferred method and set aside.
  2. In a large bowl, combine the cooked rice, salt, and lime juice.
  3. In a skillet, heat ghee or oil and add mustard seeds, allowing them to pop.
  4. Add curry leaves and peanuts to the skillet, cooking until peanuts are fragrant.
  5. Pour the peanut-spice mixture over the rice and toss gently.
  6. In the same skillet, heat more ghee or oil and sauté onions and chilies until caramelized.
  7. Mix the onion-chili mixture into the rice and add cilantro.
  8. Taste and adjust seasoning with more salt and lime juice as desired.
