Chipotle Cilantro Lime Rice

Ingredients

The rice

  • 2 cups basmati rice
  • 1 each bay leaf
  • Salt to taste
  • 1 teaspoon olive oil or rice bran oil

The flavorings

  • 2 tablespoons fresh cilantro
  • 2 tablespoons fresh lime juice
  • 2 tablespoons fresh lemon juice

Instructions

  1. Bring 8 cups of water to a boil in a large pot.
  2. Add the rice, bay leaf, oil (if using), and salt to taste, then stir and return to a boil.
  3. Boil uncovered for 10 to 12 minutes, monitoring the rice closely.
  4. Remove the bay leaf, drain the rice using a fine mesh strainer, and rinse with hot water.
  5. In a large bowl, stir in cilantro, lime juice, and lemon juice, then season with additional salt to taste.
  6. Serve hot or at room temperature.
