Chipotle Cilantro Lime Rice

Instructions
- Bring 8 cups of water to a boil in a large pot.
- Add the rice, bay leaf, oil (if using), and salt to taste, then stir and return to a boil.
- Boil uncovered for 10 to 12 minutes, monitoring the rice closely.
- Remove the bay leaf, drain the rice using a fine mesh strainer, and rinse with hot water.
- In a large bowl, stir in cilantro, lime juice, and lemon juice, then season with additional salt to taste.
- Serve hot or at room temperature.
