Ingredients

Vegan Honey Mustard Dressing

  • 2 tablespoons vegan mayonnaise
  • ¾ tablespoon maple syrup
  • 1 tablespoon mustard

Vegan Fried Chicken Tofu

  • ¼ cup soy milk or almond milk
  • 1 tablespoon vinegar
  • ½ cup panko breadcrumbs
  • 2 teaspoons Cajun seasoning
  • ¼ cup flour
  • ¼ block extra firm tofu
  • 2 tablespoons cajun seasoning
  • 2 tablespoons coconut oil or other oil

Salad

  • 3 cups lettuce
  • 1 cup chopped grape tomatoes
  • ½ carrot shredded
  • ¼ cup shredded red cabbage
  • ¼ cup shredded vegan cheese

Instructions

  1. Mix the dressing ingredients and refrigerate.
  2. Prepare the tofu by cutting it into strips and pressing to remove excess water.
  3. Set up dredging stations with flour, vegan buttermilk, and panko breadcrumbs mixed with seasoning.
  4. Dredge tofu in flour, dip in buttermilk, and coat with breadcrumbs.
  5. Heat oil in a pan and fry tofu strips until golden brown.
  6. Toss salad ingredients together and top with fried tofu and dressing.
