Maple Dijon Dipping Sauce

Instructions
- 1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
- 2. Slice the tofu into 12 pieces and lightly press each slice with a paper towel.
- 3. Mix vegetable broth and soy sauce in a shallow pan and marinate the tofu for at least 10 minutes.
- 4. Prepare three bowls: one with flour, one with seasoned panko breadcrumbs, and one with flax eggs or beaten eggs.
- 5. Bread each piece of tofu in flour, then dip in eggs, and coat with panko.
- 6. Bake the breaded tofu for 30 minutes, flipping halfway through, until golden brown and crispy.
- 7. For the dipping sauce, mix Dijon mustard, mayo, maple syrup, and soy sauce.
