Kodiak Cake Muffins

Ingredients

  • 2 cups Kodiak Power Cakes Mix – Buttermilk
  • 2 ripe bananas mashed (approx. 209g)
  • 1 cup unsweetened vanilla almond milk
  • 1 large egg
  • ¼ cup maple syrup or honey
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • ½ cup mini chocolate chips

Instructions

  1. Preheat the oven to 350ºF and spray a muffin pan with nonstick cooking spray.
  2. In a large bowl, add the Kodiak Cakes Mix and set aside.
  3. In a separate bowl, combine the mashed bananas, milk, egg, maple syrup, cinnamon, and vanilla extract.
  4. Add the wet ingredients to the Kodiak Cakes Mix and stir until just combined.
  5. Gently fold in the mini chocolate chips, saving some for topping.
  6. Transfer the batter to the muffin pan, filling each cavity about 3/4 full.
  7. Sprinkle the tops with reserved chocolate chips and bake for about 22 minutes.
  8. Allow the muffins to cool for 5 minutes in the pan before transferring to a wire rack.
