The chocolate coating

Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a medium bowl, mix together the flour, baking powder, and salt.
- In a large bowl, cream together the coconut oil, coconut sugar, eggs, vanilla, and almond extract.
- Add the dry ingredients to the wet ingredients and stir until well combined.
- Divide the dough in half and shape each half into logs about 4 inches by 8 inches.
- Bake the logs for 25 minutes, then let them cool for 10 minutes before slicing.
- Lay the slices flat and bake for another 10 minutes.
- While cooling, melt the chocolate chips with the coconut oil in 30-second increments.
- Dip the bottom of each biscotti in melted chocolate and place them chocolate side up to harden.
