Smoked S'mores Cheesecake

Ingredients

The crust

  • 12 oz graham crackers
  • 3 tbsp light brown sugar
  • 6 tbsp melted butter

The filling

  • 4 to 8 oz Neufchatel cheese
  • cup light brown sugar
  • 2 tbsp maple syrup
  • 1 tsp lemon zest
  • 1 tbsp fresh lemon juice
  • 2 tsp vanilla extract
  • 1 tbsp butter
  • 5 large eggs
  • cup cold smoked 70% cocoa dark chocolate
  • 1 cup small marshmallows
  • 1 tbsp butter or coconut oil (for coating the pan)

Instructions

  1. Preheat the oven to 400°F and prepare the springform pan with oil.
  2. Process graham crackers into crumbs, mix with brown sugar and melted butter, then press into the pan and bake for about 8 minutes.
  3. Combine Neufchatel cheese, sugar, maple syrup, vanilla, lemon juice, and zest in a mixer.
  4. Add eggs one at a time, mixing until well combined, then pour the batter into the crust.
  5. Smoke the cheesecake at 250°F for 30 minutes until golden.
  6. Transfer to the oven at 350°F and bake for an additional 45 minutes until set.
  7. Cool on the counter for 20 minutes, then refrigerate for a few hours before serving.
