Instructions
- Preheat the oven to 400°F and prepare the springform pan with oil.
- Process graham crackers into crumbs, mix with brown sugar and melted butter, then press into the pan and bake for about 8 minutes.
- Combine Neufchatel cheese, sugar, maple syrup, vanilla, lemon juice, and zest in a mixer.
- Add eggs one at a time, mixing until well combined, then pour the batter into the crust.
- Smoke the cheesecake at 250°F for 30 minutes until golden.
- Transfer to the oven at 350°F and bake for an additional 45 minutes until set.
- Cool on the counter for 20 minutes, then refrigerate for a few hours before serving.
