Ingredients

The base

  • 1 can (14-ounce) full-fat coconut milk
  • 2 cups water

The spices

  • 1 dried cinnamon stick (3-inch) or ¼ teaspoon ground cinnamon
  • 2 pieces (1-inch) fresh turmeric, peeled and thinly sliced or 1 teaspoon ground turmeric
  • 1 piece (1-inch) fresh ginger, peeled and thinly sliced or ¼ teaspoon ground ginger
  • ¼ teaspoon freshly ground black pepper

Sweetener

  • 1 tablespoon honey (optional)

For serving

  • to taste ground cinnamon

Instructions

  1. Combine the coconut milk, cinnamon, turmeric, ginger, black pepper, and honey in a small saucepan.
  2. Whisk in the water.
  3. Bring the mixture to a low boil over high heat, then reduce to a simmer, stirring occasionally for about 10 minutes.
  4. Strain the milk through a strainer or cheesecloth to remove solids.
  5. Taste and adjust sweetness with more honey if desired, then serve topped with ground cinnamon.
