Healthier Baked Mozzarella Sticks

Ingredients

The cheese

  • 6 slices mozzarella cheese

The coating

  • 2 cups panko breadcrumbs
  • cup almond flour
  • 2 tbsp corn starch
  • 2 tbsp toasted sesame seeds
  • 1 tbsp dried parsley
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp mustard powder
  • 1 tsp sweet paprika
  • ½ tsp ground black pepper
  • ¼ tsp cayenne pepper

The binding

  • 2 large eggs
  • ¼ cup whole wheat flour
  • 2-3 tbsp extra-virgin olive oil

Instructions

  1. Cut mozzarella cheese into 24 sticks of approximately 2" x ½" x ½".
  2. Mix panko breadcrumbs, almond flour, corn starch, sesame seeds, dried parsley, salt, garlic powder, mustard powder, paprika, black pepper, and cayenne in a shallow bowl.
  3. Place whole wheat flour in a second shallow bowl and beat eggs in a third bowl.
  4. Coat each cheese stick in flour, then dip in eggs, and finally coat in the breadcrumb mixture, repeating the egg and breadcrumb coating.
  5. Place coated sticks on a baking sheet and freeze for at least 2 hours.
  6. Preheat the oven to 400°F.
  7. Brush each stick lightly with olive oil and bake for 10 minutes.
  8. Switch to broil, flip the sticks, and broil for about 3 minutes until golden brown.
