Tabasco Brined Spicy Drumsticks

The drumsticks

blue cheese crumbles

Instructions
- Mix water, kosher salt, and Tabasco in a large bowl or stockpot.
- Add drumsticks to the brine and refrigerate overnight or up to 8 hours.
- Preheat the oven to 400°F.
- Remove drumsticks from brine, rinse in cold water, and pat dry.
- Line a baking sheet with foil, place a baking rack on top, and spray with cooking spray.
- Place drumsticks on the rack, mix canola oil with Tabasco, baste the drumsticks, and season with black pepper.
- Bake for 25 minutes, then increase temperature to 500°F and cook for an additional 10-13 minutes until golden brown and internal temperature reaches 185°F.
- Remove from oven, garnish with blue cheese and green onion, and serve with more Tabasco if desired.
