Tabasco Brined Spicy Drumsticks

Ingredients

The brine

  • 1 gallon water
  • ½ cup kosher salt
  • 4 tablespoons Tabasco Original Red Sauce

The drumsticks

  • 10-12 pieces chicken drumsticks
  • 1 ½ tablespoons canola oil
  • 1 cup blue cheese crumbles
  • 1 piece green onion, chopped
  • to taste kosher salt
  • to taste freshly ground black pepper

Instructions

  1. Mix water, kosher salt, and Tabasco in a large bowl or stockpot.
  2. Add drumsticks to the brine and refrigerate overnight or up to 8 hours.
  3. Preheat the oven to 400°F.
  4. Remove drumsticks from brine, rinse in cold water, and pat dry.
  5. Line a baking sheet with foil, place a baking rack on top, and spray with cooking spray.
  6. Place drumsticks on the rack, mix canola oil with Tabasco, baste the drumsticks, and season with black pepper.
  7. Bake for 25 minutes, then increase temperature to 500°F and cook for an additional 10-13 minutes until golden brown and internal temperature reaches 185°F.
  8. Remove from oven, garnish with blue cheese and green onion, and serve with more Tabasco if desired.
