Ingredients

The chicken

  • 8-10 pieces medium-large chicken drumsticks

The rub

  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ tablespoon olive oil

The sauce

  • 1 tablespoon butter
  • 2 tablespoons grated onion
  • 2 cloves finely minced garlic
  • 1 cup ketchup
  • ½ cup brown sugar
  • 2 tablespoons honey
  • 1 teaspoon mustard
  • ½ tablespoon Worcestershire sauce
  • 2 tablespoons finely grated American Heritage Chocolate

Instructions

  1. Preheat the oven to 350°F.
  2. Pat the chicken dry and trim the skin halfway.
  3. Mix the rub spices and coat the chicken evenly.
  4. In a bowl, combine ketchup, brown sugar, honey, mustard, and Worcestershire sauce.
  5. Heat olive oil in a 12-inch cast iron skillet over medium heat and sear the chicken for 2-3 minutes on each side.
  6. Remove the chicken and add butter, onion, and garlic to the skillet, cooking until softened.
  7. Add the ketchup mixture to the skillet and bring to a simmer, then stir in the chocolate until melted.
  8. Return the chicken to the skillet, coating it in the sauce.
  9. Transfer the skillet to the oven and bake for 45 minutes until the chicken reaches an internal temperature of 165°F.
  10. Let it cool for a few minutes before serving.
