Instructions
- Preheat the oven to 350°F.
- Pat the chicken dry and trim the skin halfway.
- Mix the rub spices and coat the chicken evenly.
- In a bowl, combine ketchup, brown sugar, honey, mustard, and Worcestershire sauce.
- Heat olive oil in a 12-inch cast iron skillet over medium heat and sear the chicken for 2-3 minutes on each side.
- Remove the chicken and add butter, onion, and garlic to the skillet, cooking until softened.
- Add the ketchup mixture to the skillet and bring to a simmer, then stir in the chocolate until melted.
- Return the chicken to the skillet, coating it in the sauce.
- Transfer the skillet to the oven and bake for 45 minutes until the chicken reaches an internal temperature of 165°F.
- Let it cool for a few minutes before serving.
