Instructions
- Preheat the oven to 450ºF and prepare a baking sheet with wire racks.
- Rinse and pat dry the fish, then cut it into 3- to 4-ounce pieces.
- In a food processor, combine tortilla chips and spices, grinding until breadcrumb-like.
- Brush mayonnaise on both sides of each fish piece and coat with the tortilla chip mixture.
- Place the coated fish on the wire rack and mist with nonstick cooking spray.
- Bake for 20 minutes, ensuring the fish flakes easily with a fork.
- While baking, mix aioli ingredients in a bowl.
- Serve the fish with aioli and optional garnishes.
