Ingredients

The Cod

  • 1 to 1 ½ lbs cod fillets
  • 6 oz tortilla chips
  • 1 ½ teaspoons garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon paprika
  • ½ teaspoon fine salt
  • ¼ teaspoon black pepper
  • 2–3 tablespoons Primal Kitchen Mayo
  • to taste nonstick cooking spray

The Aioli

  • cup Primal Kitchen Mayo
  • 1 teaspoon grated lemon zest
  • 2 teaspoons fresh lemon juice
  • 1 clove garlic
  • teaspoon dried dill
  • a pinch coarse sea salt

Optional Garnishes

  • to taste lemon wedges
  • to taste capers
  • to taste fresh chives or parsley

Instructions

  1. Preheat the oven to 450ºF and prepare a baking sheet with wire racks.
  2. Rinse and pat dry the fish, then cut it into 3- to 4-ounce pieces.
  3. In a food processor, combine tortilla chips and spices, grinding until breadcrumb-like.
  4. Brush mayonnaise on both sides of each fish piece and coat with the tortilla chip mixture.
  5. Place the coated fish on the wire rack and mist with nonstick cooking spray.
  6. Bake for 20 minutes, ensuring the fish flakes easily with a fork.
  7. While baking, mix aioli ingredients in a bowl.
  8. Serve the fish with aioli and optional garnishes.
