Avocado Veggie Panini

Ingredients

The filling

  • tablespoons butter or olive oil
  • 1 unit minced shallot
  • 8 ounces sliced baby portobello mushrooms
  • 1 cup cherry or grape tomatoes
  • 2 cups chopped kale
  • to taste salt
  • 2 units avocados

The bread

  • 8 pieces thick, sturdy wheat bread

Optional cheese

  • as desired melty white cheese like Provolone or Mozzarella

Instructions

  1. Heat the butter in a skillet over medium-high heat and sauté the shallots until translucent.
  2. Add the mushrooms and sauté until lightly browned, then add the tomatoes and kale, cooking until wilted.
  3. Remove from heat and season with salt.
  4. Mash the avocados in a bowl and spread on each slice of bread.
  5. Assemble the sandwiches with the sautéed vegetables and cheese if desired, then top with another slice of bread.
  6. Place the sandwiches in a preheated panini press and cook until the bread is browned.
