Avocado Veggie Panini

The bread

Instructions
- Heat the butter in a skillet over medium-high heat and sauté the shallots until translucent.
- Add the mushrooms and sauté until lightly browned, then add the tomatoes and kale, cooking until wilted.
- Remove from heat and season with salt.
- Mash the avocados in a bowl and spread on each slice of bread.
- Assemble the sandwiches with the sautéed vegetables and cheese if desired, then top with another slice of bread.
- Place the sandwiches in a preheated panini press and cook until the bread is browned.
