Ingredients

The chicken

  • 3 pieces boneless skinless chicken breasts
  • 3 tablespoons butter
  • to taste Kosher salt
  • to taste freshly ground black pepper

The sauce

  • 2 heaping tablespoons shallots, minced
  • 1 clove garlic, pressed or minced
  • 1 tablespoon all-purpose flour
  • ¾ cup whole milk
  • 1 tablespoon whole grain mustard
  • 1 cup extra sharp white cheddar cheese, grated
  • ½ cup Parmesan cheese, grated
  • cup panko bread crumbs
  • to taste cayenne pepper

For garnish

  • to taste Italian flat leaf parsley, chopped

Instructions

  1. Preheat the oven to 400°F and prepare a baking dish with cooking spray.
  2. Place the chicken breasts in the dish, spread 1 tablespoon of butter on top, and season with salt and pepper.
  3. Bake the chicken for about 20 minutes until the internal temperature reaches 155°F.
  4. In a saucepan, melt the remaining butter and sauté the shallots and garlic for 2 minutes.
  5. Add the flour and cook for another 2 minutes, then whisk in the milk and cook until the sauce thickens.
  6. Stir in the mustard, cheddar cheese, and ¼ cup of Parmesan until smooth, seasoning with cayenne and salt.
  7. Remove the chicken from the oven, increase the temperature to 475°F, and pour the sauce over the chicken.
  8. Sprinkle the chicken with panko and the remaining Parmesan, then bake for an additional 5-10 minutes until the chicken reaches 165°F and is golden brown.
  9. Garnish with parsley before serving.
