Cheesy Mustard Baked Chicken Breasts

Instructions
- Preheat the oven to 400°F and prepare a baking dish with cooking spray.
- Place the chicken breasts in the dish, spread 1 tablespoon of butter on top, and season with salt and pepper.
- Bake the chicken for about 20 minutes until the internal temperature reaches 155°F.
- In a saucepan, melt the remaining butter and sauté the shallots and garlic for 2 minutes.
- Add the flour and cook for another 2 minutes, then whisk in the milk and cook until the sauce thickens.
- Stir in the mustard, cheddar cheese, and ¼ cup of Parmesan until smooth, seasoning with cayenne and salt.
- Remove the chicken from the oven, increase the temperature to 475°F, and pour the sauce over the chicken.
- Sprinkle the chicken with panko and the remaining Parmesan, then bake for an additional 5-10 minutes until the chicken reaches 165°F and is golden brown.
- Garnish with parsley before serving.
