Bacon Jalapeño Mac and Cheese

Ingredients

The pasta

  • 6 oz. Medium Shell Pasta

The sauce

  • 1 tbsp. Unsalted Butter
  • 1 tbsp. All-Purpose Flour
  • ¾ cup Half and Half
  • 1 medium Jalapeño Pepper, finely chopped
  • ½ tsp. Garlic Powder
  • ½ tsp. Mustard Powder
  • ½ tsp. Smoked Paprika
  • ½ tsp. Kosher Salt
  • ½ tsp. Black Pepper
  • cups shredded Pepper Jack Cheese

The toppings

  • 2 strips Crispy Bacon

Instructions

  1. Boil salted water and cook the pasta until al dente, reserving some pasta water.
  2. Grind the crispy bacon into fine pieces using a food processor.
  3. Melt butter in a saucepan and whisk in flour to create a roux.
  4. Add jalapeños and spices to the roux, then gradually whisk in half and half until thickened.
  5. Stir in the cheese until melted, then mix in the cooked pasta and bacon.
  6. Serve with additional bacon and black pepper on top.
