Buffalo Chicken Caesar Salad

Ingredients

For the chicken

  • 2 pieces boneless chicken breasts
  • 1 tsp garlic powder
  • 1 tbsp melted butter
  • ¼ cup hot sauce
  • 2 tbsp bbq sauce
  • to taste none salt and freshly cracked pepper

For the salad

  • 4 cups chopped romaine or spring mix
  • ½ cup cherry tomatoes
  • cup shredded carrot
  • ¼ cup blue cheese crumbles
  • ¼ cup chopped red onion
  • ¼ cup chopped green onion
  • ¼ cup sliced or pickled jalapeños
  • ¼ cup greek yogurt caesar dressing

Instructions

  1. Season the chicken breasts with salt, pepper, and ¼ tsp of garlic powder.
  2. Grill the chicken until cooked through.
  3. In a small saucepan, melt the butter and mix in hot sauce, BBQ sauce, garlic powder, and pepper.
  4. Let the sauce cool and then toss the cooked chicken in it.
  5. For each salad, start with 2 cups of romaine, then add the buffalo chicken and other toppings.
  6. Serve immediately.
