Grilled Chicken Caesar Salad

Ingredients

The salad

  • 2 pieces boneless skinless chicken breasts
  • 8 cups chopped romaine lettuce
  • cup shaved parmesan
  • 2 tablespoons grated parmesan

Homemade garlic croutons

  • 3 cups cubed sourdough bread
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • to taste salt & pepper
  • 2 tablespoons fresh parsley, chopped

Caesar dressing

  • 1 clove garlic
  • ¼ cup white vinegar
  • ¼ cup olive oil
  • 1 teaspoon dijon mustard
  • a few dashes tabasco
  • ½ piece lemon, juiced
  • 1 tablespoon grated parmesan cheese
  • 1 teaspoon honey
  • ½ tablespoon mayo

Instructions

  1. Preheat the oven to 375°F and prepare the croutons by tossing cubed sourdough bread with olive oil and minced garlic, then bake for 10 minutes.
  2. For the Caesar dressing, blend garlic, white vinegar, mustard, tabasco, lemon juice, honey, and mayo, then add olive oil and grated parmesan and blend until combined.
  3. Preheat the grill to medium-high heat, season the chicken breasts with salt and pepper, and grill for 4-7 minutes per side until cooked through.
  4. Let the grilled chicken rest for 5 minutes, then slice it.
  5. In a large bowl, combine chopped romaine lettuce, sliced grilled chicken, croutons, shaved parmesan, and drizzle with the dressing.
