The Salad

Instructions
- Preheat the oven to 375°F and line a baking sheet with parchment paper.
- Heat 2 tbsp of avocado oil in a cast iron skillet.
- Season the chicken with salt and pepper, and cook in the skillet until fully cooked, flipping halfway.
- Remove the chicken when the internal temperature reaches 165°F.
- In a bowl, mix bread cubes with avocado oil, garlic, salt, and pepper.
- Spread the bread mixture on the baking sheet and bake for 12-15 minutes until golden brown, tossing halfway through.
- Whisk together all dressing ingredients in a bowl, tasting and adjusting seasoning as needed.
- In a large bowl, toss the chopped romaine with ⅔ of the dressing.
- Top the salad with sliced chicken, croutons, parmesan cheese, and the remaining dressing.
- Serve immediately.
