Healthy Chicken Caesar Salad

Ingredients

The Chicken

  • 3 large chicken breasts
  • to taste salt
  • to taste pepper
  • 2 tbsp avocado oil

The Croutons

  • ½ loaf French bread
  • 2 tbsp avocado oil
  • 2 cloves garlic, minced
  • to taste salt
  • to taste pepper

The Dressing

  • cup plain Greek yogurt
  • cup mayonnaise
  • 3 tbsp parmesan cheese
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tbsp Worcestershire sauce
  • 2 tsp Dijon mustard
  • 2 tsp anchovy paste
  • 1 tbsp avocado oil
  • ½ tsp salt
  • ½ tsp pepper

The Salad

  • 3 whole hearts of romaine
  • cup parmesan cheese

Instructions

  1. Preheat the oven to 375°F and line a baking sheet with parchment paper.
  2. Heat 2 tbsp of avocado oil in a cast iron skillet.
  3. Season the chicken with salt and pepper, and cook in the skillet until fully cooked, flipping halfway.
  4. Remove the chicken when the internal temperature reaches 165°F.
  5. In a bowl, mix bread cubes with avocado oil, garlic, salt, and pepper.
  6. Spread the bread mixture on the baking sheet and bake for 12-15 minutes until golden brown, tossing halfway through.
  7. Whisk together all dressing ingredients in a bowl, tasting and adjusting seasoning as needed.
  8. In a large bowl, toss the chopped romaine with ⅔ of the dressing.
  9. Top the salad with sliced chicken, croutons, parmesan cheese, and the remaining dressing.
  10. Serve immediately.
