Chicken Caesar Salad

Ingredients

Dressing

  • ½ cup fat free plain Greek yogurt
  • 3 fillets anchovies
  • Tbsp olive oil
  • Tbsp full fat mayonnaise
  • 2 Tbsp fresh lemon juice
  • tsp dijon mustard
  • 1 Tbsp Worcestershire sauce
  • ½ tsp freshly ground black pepper
  • to taste salt
  • 2 cloves garlic

Croutons

  • ½ (16 oz) loaf French bread
  • 3 Tbsp olive oil
  • 1 clove garlic
  • ¼ each salt
  • ¼ each freshly ground black pepper

Salad

  • 1 lb chicken boneless skinless breasts
  • 1 large head Romaine lettuce
  • ½ cup finely shredded parmesan cheese

Instructions

  1. Prepare the dressing by mashing the anchovy fillets into a paste, then mix with mayonnaise, olive oil, lemon juice, mustard, Worcestershire sauce, pepper, salt, and garlic. Stir in the Greek yogurt and chill.
  2. Preheat the oven to 375°F. Cut the French bread into cubes and bake for 5 minutes.
  3. Mix olive oil, garlic, salt, and pepper in a bowl. Drizzle over the bread cubes, toss, and bake for an additional 10-12 minutes until golden brown.
  4. In a large bowl, combine chopped lettuce, grilled chicken, croutons, and half of the parmesan. Drizzle with dressing, toss, and serve topped with remaining parmesan.
