Ingredients

The wraps

  • lbs boneless, skinless chicken breasts
  • head Romaine lettuce
  • 2 small avocados
  • 1 cup grape tomatoes
  • cup Parmesan cheese
  • 4 burrito-sized tortillas

The dressing

  • cup fat-free plain Greek yogurt
  • ¼ cup light mayonnaise
  • 1 Tbsp olive oil
  • 3 fillets anchovy
  • Tbsp fresh lemon juice
  • 2 tsp Worcestershire sauce
  • tsp Dijon mustard
  • 2 small cloves garlic
  • 2 Tbsp water
  • to taste salt
  • to taste black pepper

Instructions

  1. Whisk together all dressing ingredients, adding water to achieve desired thickness.
  2. Prepare wrap ingredients by slicing chicken and halving tomatoes.
  3. Layer tortillas with lettuce, chicken, avocados, tomatoes, and Parmesan.
  4. Spoon dressing over the top and wrap the tortillas.
  5. Serve immediately.
