Ingredients

The chicken and breading

  • lbs chicken breasts
  • 1 cup flour
  • ½ tsp salt
  • ½ tsp pepper
  • 2 large eggs
  • 2 cups panko breadcrumbs
  • 1 cup grated parmesan cheese
  • ¼ cup neutral oil

The salad and dressing

  • 1 large head romaine lettuce, chopped small
  • 1 cup croutons
  • 1 cup shredded parmesan
  • ½ cup caesar dressing

The wraps

  • 4 extra large burrito wraps

Instructions

  1. Slice the chicken in half widthwise and pound each piece to ¼ inch thick.
  2. Set up three bowls: one with flour, salt, and pepper; one with whisked eggs; and one with panko and parmesan.
  3. Coat each chicken piece in flour, then dip in egg, and finally coat with the breadcrumb mixture.
  4. Heat oil in a large saucepan and cook the chicken breasts for 4-5 minutes on each side until golden brown.
  5. In a bowl, combine lettuce, croutons, parmesan, and caesar dressing, and toss until mixed.
  6. Slice the cooked chicken and add it to the salad mixture, tossing to combine.
  7. Place the salad mixture onto a wrap, roll it tightly, and cut in half to serve.
