Chicken and Mushroom Caesar Salad

Ingredients

  • 3 pieces chicken breasts
  • 3 hearts Romaine lettuce, chopped
  • 2 packages Monterey Mushrooms Salad Toppers
  • 1 Tbsp avocado oil
  • ½ tsp salt
  • ¼ tsp pepper
  • to taste shaved parmesan cheese
  • to taste Caesar dressing of choice

Instructions

  1. Preheat the oven to 375°F and line a baking sheet with parchment paper.
  2. Place the chicken breasts on the baking sheet, brush with avocado oil, and sprinkle with salt and pepper.
  3. Bake the chicken for 40 minutes or until the internal temperature reaches 165°F.
  4. While the chicken is baking, heat 1 Tbsp of avocado oil in a pan over medium heat and sauté the mushrooms with salt and pepper for about 5 minutes.
  5. Remove the mushrooms from heat and let them cool.
  6. Chop the Romaine lettuce and place it in a bowl.
  7. Once the chicken is done, slice it into strips and add it to the salad along with the mushrooms.
  8. Top the salad with shaved parmesan cheese and Caesar dressing, then enjoy!
