Chicken and Mushroom Caesar Salad

Instructions
- Preheat the oven to 375°F and line a baking sheet with parchment paper.
- Place the chicken breasts on the baking sheet, brush with avocado oil, and sprinkle with salt and pepper.
- Bake the chicken for 40 minutes or until the internal temperature reaches 165°F.
- While the chicken is baking, heat 1 Tbsp of avocado oil in a pan over medium heat and sauté the mushrooms with salt and pepper for about 5 minutes.
- Remove the mushrooms from heat and let them cool.
- Chop the Romaine lettuce and place it in a bowl.
- Once the chicken is done, slice it into strips and add it to the salad along with the mushrooms.
- Top the salad with shaved parmesan cheese and Caesar dressing, then enjoy!
