Ingredients

  • ½ lb. shrimp (tails removed)
  • 1 ripe avocado
  • ½ teaspoon salt
  • a sprinkle garlic powder (optional)
  • 1 squeeze lemon
  • ½ small cucumber (diced)
  • a pinch fresh dill
  • a pinch chives

Instructions

  1. 1. Poach the shrimp in boiling water for 3-5 minutes until pink and opaque, then cool in ice water and cut into bite-sized pieces.
  2. 2. Mash the avocado and season with salt, lemon, and optional garlic powder.
  3. 3. Combine the shrimp, avocado mixture, cucumber, and herbs, then season to taste and serve.
