Ingredients

The chili

  • 1 unit onion (diced)
  • 2 unit bell peppers (any color, cored, seeded and diced)
  • cups frozen corn kernels
  • 4 cloves garlic (minced)
  • 2 28-oz cans diced tomatoes (with juice)
  • 2 15-oz cans red kidney beans (drained and rinsed)
  • 2 unit bay leaves
  • 4 teaspoons chili powder
  • 2 teaspoons cumin
  • teaspoons salt
  • ¼ teaspoon cayenne pepper

Toppings

  • to taste unit sour cream
  • to taste unit Monterey Jack cheese
  • to taste unit avocado
  • to taste unit cilantro (freshly chopped)

Instructions

  1. Combine all ingredients in the slow cooker.
  2. Cook on high for 4 to 5 hours or low for 6 to 8 hours until all ingredients are tender.
  3. Remove bay leaves and serve with recommended toppings.
