Ingredients

The salad

  • 2 cups shredded chicken
  • ¾ cup celery, chopped
  • ½ cup red grapes, halved
  • cup pecans, chopped
  • cup red onion, chopped
  • cup dried cranberries (optional)
  • 2 tablespoons chopped fresh tarragon

The dressing

  • 1 cup plain Dannon® Oikos® Greek Nonfat Yogurt
  • 1 each avocado, mashed
  • 1-2 tablespoons fresh lemon juice
  • to taste none Kosher salt
  • to taste none freshly ground black pepper

Instructions

  1. Mix the Greek yogurt with the mashed avocado and add lemon juice to taste, seasoning with salt and pepper.
  2. In a large bowl, combine the shredded chicken, chopped celery, grapes, pecans, red onion, tarragon, and cranberries (if using).
  3. Add the yogurt mixture to the chicken mixture and toss until well combined, adjusting seasoning if necessary.
  4. Serve as a sandwich, salad, or appetizer filling.
