Instructions
- Process oats, hemp seeds, chia seeds, flax seeds, and sunflower seeds in a food processor until finely ground.
- Add applesauce, dates, cranberries, blueberries, peanut butter, and vanilla to the processor and blend until smooth, pausing to scrape down the sides as needed.
- Pour the mixture into a bowl, cover, and chill for about 1 hour.
- Form the chilled mixture into small balls by hand and roll each ball in shredded coconut.
- Refrigerate until ready to serve, and store in an airtight container.
