Ingredients

  • ½ cup fresh blueberries
  • 1 cup pitted Medjool dates
  • ¼ cup unsalted cashews
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • 1 cup rolled oats

Instructions

  1. Combine blueberries, dates, cashews, lemon zest, and lemon juice in a food processor and blend until the dates are pureed.
  2. Add rolled oats to the food processor and process until combined.
  3. Chill the mixture for 1 hour to make it easier to form into balls.
  4. Form the chilled mixture into 12-13 small balls.
  5. Store in the fridge for up to 1 week.
